At Bản Garden, Ede cuisine embodies the simplicity and sincerity of the people of the great forest. We select ingredients from the forest, streams, and terraced fields — fresh and untouched — to preserve their natural essence. Signature dishes such as bamboo-tube rice, grilled chicken in bamboo, forest leaf soup, and mountain-style grilled pork are all prepared in traditional ways — unpretentious yet refined, rich with the taste of the earth and sky.

Hill tribe pork grilled in bamboo is a dish born from the heart of the forest. Wild or free-range pork is marinated with rock salt, forest pepper, lemongrass, and native herbs, then stuffed into fresh bamboo tubes and slow-roasted over an open flame. The fire doesn’t just cook the meat – it infuses it with the aroma of smoke, bamboo, and earth. This dish is often served during celebrations, when highland communities gather, share food, and tell stories under the stars.

Grilled chicken over open fire – even the name evokes the smoky scent of a Central Highlands kitchen. The chicken is free-range, marinated with forest salt, wild chili, lemongrass, and mắc khén (a native spice),then s lowly grilled over hot coals until golden and fragrant. Served with sticky rice cooked in bamboo tubes, this dish is rustic yet deeply flavorful – a true taste of the highlands, where fire, smoke, and hospitality come together on one plate.

Bản’s Grilled Platter is a dish that captures the essence of rustic countryside cuisine – featuring a variety of meats, seafood, and fresh vegetables, each marinated with its own unique blend of spices. In the old days, locals would grill food over glowing charcoal to share with friends and family, creating a distinctive flavor that’s aromatic, tender, and richly seasoned. More than just a meal, Bản’s Grilled Platter is a warm, communal experience — a moment to gather with loved ones and savor the authentic taste of Vietnam’s Northwest mountains.

The Ede rice tray is a rustic harmony between the Central Highlands mountains and the skillful hands of the indigenous people. Each dish carries its own original flavor: from wild wild vegetables, sweet and crunchy bamboo shoots, rich salted grilled meat, spicy and aromatic lemongrass and chili chicken to a unique bowl of bitter eggplant and anchovy soup. All are neatly arranged on a bamboo tray, not only reminiscent of the stilt houses and fire pits, but also bringing a close, cozy and unique culinary experience.

Braised beef is a traditional dish of the Ede people - one of the typical indigenous peoples of the Central Highlands. The dish has a wild, rustic flavor but is extremely sophisticated in the way it is seasoned and prepared. At Ban Garden, we recreate the Ede braised beef dish in the original spirit - from the marinade, the braise to the presentation - so that you don't have to go far to "hear the sound of the forest fire" in every piece of meat.
